I only used the noodles for two layers. The box suggests making sure the noodles are completely covered. I had three layers of meat and cheese to make sure there was plenty of liquid for the noodles. I have been tested for Celiac, early in the days of finding a 'cause' for my daily headache. It came back negative.<br />

Fast forward 4 years and I am reading more about the other symptoms of gluten intolerance and decide to go gluten free for a month and see how I feel. It took three tries for me to get to the month mark. The second time I made it three weeks and had some pizza. Then I had a really bad week for head pain (I still have a headache of some degree or length 15+ days a month, but that is a long story for another day) I started to think about both times I ate something with gluten and realized both times were followed by noticeable head pain.<br />
<br />
I gave it another try. I made it through the Christmas holiday season without a cookie or roll. I knew I needed to test my theory one more time. Last weekend we went to a favorite Italian restaurant. I had wonderful garlic knots and pasta. Followed by a day of noticeable head pain. That was enough to convince me... gluten is a trigger that can/will increase my head pain.<br />
<br />
Of course this week I was ready to throw in the proverbial towel. The headache just wouldn't go away. I didn't eat any bread, pasta, etc... Then I read a blog that mentioned Pringles are made with wheat flour. WHAT???? I didn't read the label. I know potato chips aren't a health food, but who puts wheat flour on potato chips. Apparently Pringles do. Thus explaining why my headache stuck around.<br />
<br />
Being gluten free isn't easy. It is easier than it was just a few years ago. Since I am not grain free, I still eat rice pasta and use rice flour blends for baking. I am learning about GF baking, it takes some fineness for sure. But I will keep plugging away at it. I have found some great bolts with recipes and tips to help with this transition.<br />

I am doing things on my time. I often get bogged down by expectations, usually what I perceive as the expectations of others. When, in reality, I need to focus on my own expectations. Who cares when I blog? Who cares if I blog something that 100 others have blogged about? Who cares if the idea is not 120% original, few things are? Who cares..... I will not worry about those things this year.<br />

I had a hard time picking a word for 2014. I wanted one that would encompass the things I hope to accomplish this year. First I had to figure out what that was. I set a few goals for myself:<br />
1. Blog more often<br />
2. Work on my photography<br />
3. Take piano lessons<br />
4. Move: walk, use the elliptical, go for a bike ride<br />
5. Create more<br />
<br />
Fairly simple and straight forward goals. All things I have the tools to accomplish. My issue is and has always been follow through. I am great at coming up with ideas, setting goals, even starting projects. Finishing them, or continuing them, is my problem.<br />
<br />
I got some suggestions from friends, went through some words on my own, and thought about it. I finally decided upon Persist. Here is one definition:<br />

Shouldn't he be at the top of my list? Don't I think of him often? Am I not thankful for him after all???<br />

I have to wait, today is our Anniversary. It seems silly to write about him early in the month when he gets a whole day!!! 17 years ago, this man agreed to be my husband. That is the best way to put it.<br />
<br />
We have known each other over 27 years. He says that he remembers the day we met very well. That he knew then there was something about me. He never claimed love at first sight, just that he was attracked to me. Probably more like lust. lol He was a 15 year old at the time. :) I love that story. Especially considering how many years later it was before we dated and then married.<br />
<br />
I am not an easy wife. I can be a little temperamental, I have a temper, and I can be stubborn. But he puts up with me. He isn't perfect either. I think we balance each other out pretty well.<br />
<br />
He is a wonderful father. He has his own way of showing his love, but it is there. I really can't find the words to describe him accurately in my eyes. He is everything I need. That's it... everything I need. I love you Michael, more than I can ever say. Yet there is still much to be thankful for. Today is another life long friend.<br />

I have known Shannon since January 1986. We met as Freshmen in high school, in biology class. Poor Ms. Stansil, she couldn't have seen what would happen by putting us together as lab partners. Hey, she is the one who told us that a frog's retina would bounce. It is not my fault that she did not like to see it happen. :)<br />
<br />
That was the first of many misadventures we had through high school. Berkmar sighed a sigh of relief when I moved prior to our senior year. Yet, the move didn't keep us apart. Despite living in a time with our Facebook, cell phones, texting, etc... We stayed in touch.<br />
<br />
Out friendship has survived time, distance, and many other of lives curve balls. She is still a strong presence in my life. She is Amelia's Godmother, and has always been apart of our lives.<br />
<br />
She knew me when I was a teenager, that terrible time of insecurity of my life. She had seen me through quite a bit over the years. Now, she is a mother and has a lovely daughter.<br />
<br />
I wish the physical distance between us was less, but the spiritual distance will never grow more. Let's go back to September of 2004. I had only lived in Stuart a couple of years. I was just beginning to make good friends. When what should appear in our forecast.... Hurricane Frances. We lived in a double wide which meant we needed to evacuate. We have three cats, no place to go with three cats.<br />
<br />
Wendy, whom I only knew from the lunch room, opened her brand new home to my family and cats. Thus began the whirlwind month of September: Hurricane Frances, major power outages, a trip to her grandmother's house, a return to normalcy, and back to work.<br />
<br />
Then mother nature proved she has a deeply twisted sense of humor as Hurricane Jeanne made a u-turn in the Atlantic and headed for us. Back to Wendy's house we went for another fun filled storm. This was followed by loss of power, generators, trying to keep the children busy, and an impromptu trip to Walt Disney World. An effort to keep everyone sane.<br />

All I can tell you is that being that close to someone for a month, you are going to be friends or hate each other. We became friends. Our families have vacationed together, we spend a lot of time at each other's house, we have watched out children grow up. </div>

I am thankful for my friend Chris. We met our senior year in high school. Too long ago to put down an actual year.<br />

He has always been one to push the envelope, but in a good way. He speaks his mind and has always had a confidence that you couldn't help but notice.<br />
<br />
He helped me discover my love of Broadway musicals. I shocked him the day I sang, on key, from Phantom of the Opera. Those high note days are long gone. He encouraged me to express myself and find my style.<br />
<br />
He listened and gave advise when needed, always with love. He encouraged and called me out as well. He understands my southern charm. :) He helped me become a stronger, more confident woman.<br />
<br />
Today we have grown apart; distance and time play a role. Thanks to Facebook I get a glimpse of his life today. He has found a wonderful man to become his husband. I am so happy for him. Despite the struggles he faces, I can tell he is happy and living life to the fullest. I cannot believe that I met these ladies online 9+ years ago. Back then we were told to be worried about people we met online. After, everyone was hiding behind the anonymous computer monitor, everyone was a predator, and most certainly all the women were dirty old men. :)<br />

Yet, I posted and talked and shared with these women. It was a couple years later when someone decided we should meet... in person!!! Again, all the warnings were issued by others. "I can't believe you are going." "How do you know who they are" It seemed unlikely that 20+ women were all lying about their identities.<br />
<br />
Fast forward and there have been two large gatherings I have attended. A visit to one in Texas, and a few random dinners and meet ups through the years.<br />
<br />
They saw me through the headache years. Listening to all my complaining and only offering support. They have sent good thoughts and prayers every time they have been requested. These ladies have a powerful connection as they always seem to work.<br />
<br />
I have witnessed some growing stronger from several over the years. I can only thank them for sharing the experiences and struggles. It is a honor to witness.<br />
<br />
Of course, I would be remiss if I didn't mention our token male, Steve. Who admitted to being a man from day one. He sees life through comedic eyes and makes it a funnier place.<br />
<br />
Who knew that a bunch of women who started out with questions about photography and scrapbooking would turn into a wonderful and eclectic group of fiends. Not me, but I am sure glad it did.<br />

I can read for hours and forget about the world around me. And it is even better if that book turns put to be a series. Hunger Games certainly fit the bill. <br />

I downloaded the trilogy last weekend and set about reading the first book. I was enthralled. I didn't want to put it down. I finished it in two days. I was glad to have the other two ready to go. <br />
<br />
I spent this week reading in every spare moment I had. I even read while on the elliptical machine. (it passes the time so quickly) I finished the third book Friday evening. WOW! What a ride. I fully recommend these books to anyone. I found a tip in one of my cookbooks to roll out the dough between parchment paper to reduce the amount of flour needed. It worked nicely. Amelia and a friend are decorating them tonight. <br />

I then moved onto forming my truffle balls. I found the trick to that as well. I kept a bowl of ice next to me. I would chill my hands on a piece I ice, part them dry, and roll the truffles. <br />

Since I was melting chocolate anyway I made a couple more things. <p>For the kids; chocolate dipped marshmallows with nonperells of course. <p>And for Michael; chocolate and peanut clusters. <p>I am working on doing more of the things I love. I love baking; bread, cookies, brownies, playing with melted chocolate, etc... I am going to do more of it. Here is the mixed media canvas I created yesterday. I found the quote/definition on Pinterest. I really like it. <br />

I retyped it, changed the fonts, and added some color to some words before printing. <br />
<br />
I painted the canvas and covered it with papers. I added a few embellishments as well. <br />
<br />
I realized a few things while doing this:<br />
I love fonts<br />
I love bright colors<br />
I like empty space on my art<br />
<br />
It is so easy to look at other creations and compare our Art to it. But I am embracing mine and what I like. I have made three goals to work toward over the next couple of months. I am going to use my blog for accountability. Blogging daily was NOT a goal, so that won't be happening. Here are my goals:<br />
<br />
1. Exercise at least three days a week. I have made a calendar and am giving myself a star on the days I exercise. That way I have a visual reminder, it is on the cabinet door above my computer.<br />
<br />
2. Take piano lessons. This is a much longer-term goal. I have to start. I will be calling an instructor tomorrow about lessons. I can read music and know the notes, but I need guided practice, drills, and a plan of action. My goal is to play anything (within reason), not just learn to play specific songs.<br />
<br />
3. Take more photos. I found a cute 30 day photo challenge on Pinterest. I will be doing that for the next month; and that is where most of the posts will come from.
